Banana&Chocolate tarts - Tartelettes Banane&Chocolat


 
For 8 small tarts

For the pastry
  • 125g butter
  • 100g icing sugar
  • 1 egg
  • 300g flour
  • 1  teaspoon vanilla sugar
For the filing
  • 3 bananas
  • 250g liquid cream
  • 40g sugar
  • 175g cooking chocolate
  • Lemon juice
Mix the butter and the icing sugar with a whisk until it is homogeneous. Add the egg and the flour without working the dough too much. Wrap it in cello wrap and put it in the fridge for 1 hour.
Meanwhile prepare the filing. Mash the banana with a fork and pour the lemon juice to prevent them from blackening.
Melt the chocolate in a double boiler. Bring cream to a boil. In a bowl combine egg yolk, egg and sugar. When cream boils, pour it into the bowl, whip, and put everything back in the pan. Cook stirring making 8. Pour in the melted chocolate and mix gently.
Spread the dough in small tart dishes, prick them with a fork and put them in the oven for 15-20 minutes, then leave to cool.
Garnish with the mashed bananas and press with the back of the fork.
Pour the ganache chocolate on the banana puree and put the pies in the refrigerator for at least 2 hours.




Pour 8 tartelettes

Pour la pâte sucrée
  • 125g de beurre
  • 100g de sucre glace
  • 1 oeuf
  • 300g de farine
  • 1 cac de sucre vanillé
Pour la garniture
  • 3 bananes
  • 250g de creme liquide
  • 1 oeuf
  • 40g de sucre
  • 175g de chocolat dessert
  • jus de citron
Lisser le beurre avec le sucre glace au batteur jusqu'a ce que le mélange soit homogene. Ajouter l'oeuf puis la farine sans trop travailler la pate. Envelopper la pate dans du film plastique et la mettre au frigo pendant 1 heure.
Pendant ce temps la préparer la garniture. Ecraser les bananes a la fourchette et verser le jus de citron pour eviter qu'elles noircissent.
Faire fondre le chocolat au bain-marie. Porter la creme a ébullition. Dans un saladier mélanger le jaune d'oeuf, l'oeuf et le sucre. Lorsque la creme bout, la verser dans le saladier, fouetter et tout remettre dans la casserole. Faire cuire en remuant en faisant des 8. Verser dans le chocolat fondu et mélanger doucement.
Etaler la pate dans les moules a tartelettes, les piquer avec une fourchette et les mettre au four pendant 15-20 minutes puis laisser refroidir.
Garnir les fonds de tarte avec l'écrasé de bananes et tasser avec le dos de la fourchette.
Verser la ganache au chocolat sur la purée de bananes et mettre les tartelettes au frigo pendant au moins 2 heures.
