Quatre Quart

Quatre quart (means four quarter, because the cake is made with the same quantity of 4 ingredients) is a cake that reminds me my child snacks, it is the first time that I made one myself, and I found the recipe on the super "Larousse de la cuisine" book that I got as a gift at Christmas.

  • 180 g butter
  • 180 g sugar
  • 3 eggs (60 g each)
  • 180 of flour
  • 1 pinch of salt

Take out the butter from the fridge fairly early so it is fully soft.
Work the butter with a spatula to make it creamy. Add the sugar in 2 or 3 times and vigorously beat the mixture, which should be smooth.
Break the eggs separating the yolk from the white. Add the yolks to the preparation and mix well.
Stir in the sifted flour. Beat the egg whites with a pinch of salt and incorporate it by lifting the dough.
Butter a cake pan and pour the batter.
Cook for 30 minutes by placing the mould on the middle grill of the oven.
Check the cooking with a knife, the blade must be dry.
